1 Whole Rockfish, Gutted, Cleaned, and Descaled
2-3 Tablespoons Olive Oil
2 Tablespoons Lemon Juice
1 Teaspoon Sea Salt
¼ Teaspoon Fresh Ground Pepper
2 Sprigs of Fresh Thyme
10 Lemon Slices
- Preheat the oven to 400°F. Line a large sheet pan with parchment paper or a silicone mat. Lay the fish on the sheet.
- In a small bowl whisk together the olive oil and lemon juice. Brush this over the whole fish, on both sides. Sprinkle the fish generously with the salt and pepper and stuff the cavity with the fresh time and half of the lemon slices. Arrange the remaining lemon on top of the fish and then bake it.
- Bake the fish for 15-20 minutes or until it reaches an internal temperature of 145°F.
