Easy Roasted Eggplant Recipe

Expert Tips

    • If you do not like the eggplant’s skin, you can peel it, but it is not required for this recipe.



    • 1 Large American Eggplant

    • 1 Tablespoon Olive Oil

    • 1/2 Teaspoon Dried Thyme

    • 1/2 Teaspoon Dried Oregano

    • 1/2 Teaspoon Salt

    • 1/4 Teaspoon Pepper



    1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat.

    1. Slice the eggplant into ¼ inch slices. Lay the slices on a paper towel and use a second paper towel to press them dry. Repeat the drying process until the paper towel comes away fairly dry.

    1. Arrange the eggplant slices in a single layer on the prepared sheet pan. Drizzle with about half of the olive oil and then flip and drizzle the other side with the remaining oil.

    1. In a small bowl, whisk together the thyme, oregano, salt, and pepper. Generously sprinkle this over the eggplant.

    1. Bake the eggplant slices for 25 to 30 minutes or until tender and soft in the center.

    1. Serve warm.
